Trees and Cheese
It's what's for dinner!
When we have the time we like to stop at Cabella's to do a little shopping. They have some great spice mixes, kits for making jerky, sausage, and canning, and even some delicious soup mixes for easy cooking while in the truck. Best of all, Cabella's has dedicated truck parking! Recently we picked up a Broccoli and Cheese soup mix from one of our Cabella stops. While their soup bases are quite good just as they are, I always like to spruce them up just a little to make them my own.
- 1 bag of Cheese and Broccoli Soup Mix from Cabella's
- 8 cups water
- 1 cup whole milk or heavy cream
- 1 cup shredded Sharp Cheddar Cheese
- 4-8oz Cream Cheese 1 Whole head of Broccoli florets (steamed)
- 6-7 large White Button Mushrooms (diced)
- 1/2 small Yellow Onion (diced)
- 2-3 cloves Garlic (Diced)
- 1 TBSP real Butter or Olive Oil
- Salt and Pepper to taste
Of course, I started with a sofrito, a saute of onion and garlic in a bit of butter, with salt and pepper to taste. Next I added the base Broccoli and Cheese soup mix along with 8 cup of water per the instructions. I also added a cup of whole milk, 1 cup shredded cheddar cheese, 1/2 of an 8oz a block of cream cheese, a whole head of broccoli florets (steamed first), and finally a handful of mushrooms (sliced).
All this cooked in the Aroma for 30 minutes with occasional stirring. If the soup gets too thick while cooking, add water or milk a little at a time until desires consistency.
Pretzels are a great addition to any cheesy soup, perfect for dipping. I got these pretzels from a pretzel place a while ago and froze what we didn't eat at the time. I simply heated them up in the toaster oven for dipping in the soup.
I used a crock pot liner bag in the aroma. Cooking in the truck you learn the value of one-pot meals with thing like oven or crock pot bags for easy cleanup. Any non-disposable utensils are sprayed down with vinegar to kill bacteria then wiped down with clean, wet paper towels. All trash is disposed of inside the used crock pot bag and deposited inside of a trashcan at a truck stop or rest area. With a few adjustments, like mentioned above, it is easy to cook in the truck and maintain a sense of order and cleanliness. The last thing we want in the truck are food messes, spills, crumbs, and residual odors.
