Cooking with Left Overs!

Being on tour and having most meals catered for the cast and crew, I haven't had to cook in a while. But what do you do when catering has a bunch of left over baked chicken for everyone to take with them? You make chicken and rice!

  • -Shredded baked chicken, skin and all (yes it was delicious. They just made way too much food! I saved the chicken bones and another full breast and wing in the freezer to make a bone broth and a chicken broth with later.)
  • -2 cloves Black Garlic (bought from the Public Market in Milwaulkee)
  • -Onion
  • -Pecan Oil (bought during our stop in New Orleans)
  • -PHS
  • -Rice
  • -Water
This is an easy 5-minute meal.  Add everything but the water to the aroma and cook on STS for 5 minutes until rice is opaque.  Add water then cook on White Rice setting until done.  Easy peasy pudding pie!

Cooked in aroma on STS setting for a good 5 minutes until rice turns opaque. This helps the rice absorb more of the flavors. Add water and cook on White Rice setting until done.

Allen "yelled" at me (not really but he did grumble about the smell of good food) when he got back in the truck after helping get the stage loaded and the girls onto their bus. I had to fix him a plate because the smell was making him hungry. I don't mind. He has a long drive ahead of him tonight back to New Orleans for the reschedule show. It's gonna be another long, bumpy night for me. But at least my man is fed with good food to give him energy for the drive ahead.

Finished. I know it doesn't look much different than before, lol. But oh my is it delicious. This is my first time cooking with Black Garlic. I got some when we were at the Market in Milwalkee.

This was way too easy, and turned out delicious. Many thanks to catering from the Orpheum Theatre in Memphis, Tennessee! Have I mentioned I love being on tour?! Gotta love the #SweetLife of #tourlife!
