A Ketogenic Friendly Dinner
Fried Cabbage and Bacon
I found this recipe a little while ago and have been wanting to give it a try. On our way across I-80 in the middle of Nebraska seemed like a good enough time as any. Truck stop food gets old, and we've had far too much of it lately. Thankfully, I'm starting to get back into the habit of cooking in the truck, and enjoying it again.
If you are following a low carb, Atkins, or ketogenic diet, this meal is perfect for you! It is low in carbs over all, and the fat content of the bacon adds to the flavor. And OH what delicious flavor this dish has! This was cooked in an electric skillet, which meant I had to use our generator (or if you have a power inverter that works too). I imagine it could also be cooked in an Aroma; or in smaller portions and longer cook time, in a 12v lunchbox oven.
What you need:
1 head green cabbage
½ medium onion diced
2 cloves minced garlic (I use the squeeze minced garlic)
8 strips bacon, cut into 1 inch pieces.
Pink Himalayan Salt, to taste
Fresh ground black pepper, to taste
1 TBS paprika
In a deep sided skillet or pan fry the bacon until crispy. Add in the diced onion and minced garlic. Salt and pepper. Cook for about 10 minutes on med heat until onions start to caramelize.
Add in the cut/shredded green cabbage. Again I added salt and pepper, a little more garlic powder (we love garlic!), and the paprika. I also added a Tablespoon of parsley flakes, as they aid in digestion but don't really add any flavor. This is totally optional. Stir well to coat cabbage with the bacon and onion grease.
Turn heat to med/low and cover. Let cook for 20-30 minutes stirring occasionally to keep anything from sticking to your pan. Once the cabbage is your desired softness (I like mine more stir-fry texture over super soft texture) your meal is done.
This is a hearty, filling meal all by itself. However, you can add in any number of things or serve things like sliced tomatoes or avocado on the side.
